Gaggenau Electric Built In Ovens

The following models may be used on the Jewish Sabbath or the Jewish Holidays (Yom Tov) in accordance with the instructions below:

Baking Ovens

BX48 30" Double oven (note: For all models listed, only the first four letters/numbers must match.)
BO48 30" Single oven
BO47 24" Single oven
BO45 24" Single oven
BOP2 24" Single oven

Combi Steam Ovens

BS48 30" Combi-steam oven, plumbed
BS47 24" Combi-steam oven, plumbed
BS46 30" Combi-steam oven, tanked
BS45 24" Combi-steam oven, tanked
BSP2 24" Combi-steam oven, tanked

Please be aware that there are restrictions in the use of ovens and stoves on the Sabbath and Holidays. If you are unfamiliar with the laws of keeping food warm on the Sabbath or cooking on the Holidays, please call your Rabbi. Please note that when the Holiday and Sabbath coincide, the Sabbath laws prevail. Before first use of a new oven be sure to wash the racks and interior of the oven thoroughly with warm water and soap to remove any coating oil.

1. The oven temperature can not be initiated, adjusted or turned off on the Sabbath or the Holidays. Once in the Sabbath mode, the oven will run for up to 74 hours (default is 24) at temperatures between 120 to 450°F (default is 185°F).

2. On the Sabbath, in lieu of a "blech", the oven controls should be covered. (Be careful not to cover vent openings.)

3. Oven light stays off when entering Sabbath Mode.

4. All food should be placed in the oven before the Sabbath begins, since none may be placed in the oven during the Sabbath.

5. On the Sabbath, the oven door may only be opened once, all the food removed and then closed. On the Holidays, the oven door may be opened/closed at any time as often as desired.

6. There is no timed bake feature in these ovens.

7. In double ovens, both ovens can be programmed to identical settings in the Sabbath Mode. See owner’s manual for detailed instructions.

8. A cooling fan will run the entire time the oven is on.

9. After recovery from a power failure, the oven comes back "OFF" in regular non-Sabbath mode and consequently, the light will go on when you open the door.

10. Only convection heating is available in the Sabbath mode.

11. These ovens also have a YOM TOV mode. (See owner’s manual for instructions.) This mode has two time periods. An initial, adjustable time period at a fixed temperature of 122°F and a second time period (up to a total of 74 hours) with an adjustable temperature between 120 to 450°F. The cavity light will go (and stay) on and a tone will sound when the switch occurs from the first to the second time period.
